Crunchy Stir-Fried Snowpeas
This delicious (and healthy) vegetable is quick and simple to make.
Stir frying allows the snow peas to retain their fresh, crispy texture.

INGREDIENTS
- 1 pound of fresh snow peas
- 1 tablespoon vegetable oil
- 1 tablespoon cooking wine
- 2 teaspoons soy sauce
INSTRUCTIONS
1. Wash, then dry the snow peas and trim the ends and the strings off of them.
(Dry the snow peas reasonably well so the energy in the hot pan is directed toward cooking the vegetables and not into vaporizing the excess water.)
2. Add about a tablespoon of oil into a hot skillet over medium-high heat. Wait for the oil to shimmer and add the snow peas.
Stir fry in uncovered skillet for about one minute.
3. All at once, add a tablespoon of cooking wine and 2 teaspoons soy sauce into the skillet. Cover for about 45-60 seconds.
4. Uncover, turn off heat and give a quick stir to mix ingredients. Taste for desired level of doneness and seasoning. Remove from heat.
5. Plate and serve.
NOTE: This technique may also be used for Sugar Snap Peas. Just increase the cooking times in steps 2 & 3 by approximately 30 seconds each.
