How to Roast Chicken
This recipe is adapted from
Ruhlman's How to Roast
, a 2014 cookbook by Michael Ruhlman.

1:30 - 1:45 Hours
YIELD
Serves 4
INGREDIENTS
One 4 lb. chicken
Kosher Salt
INSTRUCTIONS
Preheat oven to 450° F (or convection oven 425° F)
Rain salt over entire chicken, covering it completely.
Roast chicken breast side up for one hour.
Rest chicken 15-20 minutes after removing from oven, then carve and serve.
