How to Roast Chicken

This recipe is adapted from Ruhlman's How to Roast, a 2014 cookbook by Michael Ruhlman.

Serves 4

INGREDIENTS
  • One 4 lb. chicken
  • Kosher Salt
INSTRUCTIONS

Preheat oven to 450° F (or convection oven 425° F)

Rain salt over entire chicken, covering it completely.

Roast chicken breast side up for one hour.

Rest chicken 15-20 minutes after removing from oven, then carve and serve.
