No-stick Frozen Potstickers

This guidance describes how to successfully cook frozen potstickers in a stainless steel pan on a cooktop.

INGREDIENTS
  • Frozen Potstickers (like Ling-ling brand from Costco) 5-8 per serving
INSTRUCTIONS

Season the pan
Evenly coat the skillet with a teaspoon, or so, of oil. Heat for a few minutes until the first sign of smoke. When you see smoke, turn off the heat source and check to see that a thin layer of varnish has formed on the pan. If so, move to next step. If not, repeat the process above.

Cook the potstickers
Add one tablespoon of oil and the potstickers by evenly spreading the oil onto the pan and arranging the potstickers in a single layer, making sure that the bottoms contact the surface of the pan and there is space between each potsticker.

Add the amount of water called for on the package of potstickers you are using and cover the pan. (Varies depending on size of skillet)

Bring the mixture to a boil and simmer covered for 8 minutes at medium-high.

After simmering for 8 minutes, the tops of the potstickers should have the color of cooked pasta. If not, keep the pan covered for a few more minutes. Uncover and continue to cook at medium-high until the water has evaporated and the bottom of the potstickers are lightly brown. Do not move the potstickers during this stage of cooking except to check for level of browning by lifting the edge of one.

If the bottom is light brown to your satisfaction, the potstickers are done. Plate and Serve with optional dipping sauce (typically, combination of soy sauce and Chinkiang Vinegar).
