Oven Roasted Potatoes

INGREDIENTS
- 2 lbs potatoes
- 1 teaspoon Italian seasoning
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 2 tablespoons olive oil
INSTRUCTIONS
Preheat oven to 400° F.
Wash and cut potatoes into wedges. Use potatoes of similar size in order to make the wedges roughly equivalent in size to allow even cooking.
Thin skin potatoes (red, new potatoes, Yukon Gold) are the easiest to use.
Russets will work but may have to be peeled if you don’t like their thicker skins.
Place potatoes into a mixing bowl, add the Italian seasoning, garlic powder, salt, and olive oil.
Stir to combine and coat wedges evenly with spices.
Place the potato wedges in a single layer on a foil-covered baking sheet (parchment paper can be used as well).
Roast until golden brown and tender, turning once (40-45 minutes)
Remove from oven, test for doneness and season to taste.
