INGREDIENTS
- 2 (15 ½-ounce) cans chickpeas, drained, but save 1/2 cup chickpea liquid and set aside
- ⅓ cup tahini
- Juice of one fresh lemon
- 1 ½ teaspoons kosher salt, plus more to taste
- 1 garlic clove, chopped (or ¼ t garlic powder)
INSTRUCTIONS
Place the chickpeas, tahini, lemon juice, salt, and garlic in a food processor with a blade and process about one to two minutes, stopping occasionally to scrape down sides if needed.
Anytime the hummus appears to be too thick or dry, add a bit of the reserved chickpea liquid, and continue processing until smooth and creamy.
Taste and add salt if desired.
Place the hummus into a container and top with a bit of paprika and olive oil.
