Guacamole

This recipe is adapted from Chipotle’s recent posts to Twitter and Instagram. Consider the listed ingredients and their proportions as rough guidelines that can be varied to your personal taste and not exact measures. The key to this recipe is to not over-process the ingredients into a well-blended homogeneous dip. Instead, leave some chunks of avocado and chop or dice aromatics to a reasonable size so that each individual ingredient can be tasted.

INGREDIENTS
  • 2 ripe Hass avocados
  • 2 teaspoons lime juice
  • 2 tablespoons chopped cilantro
  • 4 tablespoons diced red (or other) onion
  • ½ jalapeño including seeds (diced)
  • ¼ teaspoon kosher salt
INSTRUCTIONS

Cut the avocados in half and remove pits. Scoop the avocados into a bowl.

Using a whisk, break up the avocado halves and whisk into a smooth consistency but with a few chunks remaining.

Dice the onions (using more or less onions per your preference), dice the jalapeño (remove seeds if less heat is desired), chop the cilantro and place these aromatics along with the salt into a separate bowl.

Toss the aromatics and coat with lime juice giving it a good stir to thoroughly combine.

Fold the aromatics into the whisked avocados and mix with a spoon until incorporated.

Taste the guacamole and adjust seasoning, if necessary, and serve.
