Ground Beef and Potatoes

INGREDIENTS
- 6 medium potatoes
- ½ to 1 lb ground beef
- 1 large onion, chopped
- 1 tablespoon soy sauce
- 1 teaspoon oyster sauce
- 1 teaspoon salt, divided
- ¾ cup water
- Vegetable oil
INSTRUCTIONS
COOK POTATOES
Cut potatoes into enough thin slices to measure 4 cups.
Heat oil (about one tablespoon) in seasoned skillet (or non-stick pan) until hot.
Layer sliced potatoes into skillet and sprinkle with ½ teaspoon of salt.
Cover and cook over medium heat about 20 minutes.
Uncover and check that potatoes are brown on the bottom. If so, turn the potatoes over and continue to cook uncovered until the potatoes are brown, about 5-10 minutes.
PREPARE GROUND BEEF SAUCE
While the potatoes are cooking, sauté the chopped onions over medium heat until they are soft.
Add the ground beef, stirring occasionally and cook until brown.
Add ½ teaspoon of salt, oyster sauce, soy sauce and water. Set aside and turn off the burner.
COMBINE GROUND BEEF AND POTATOES
When the potatoes are browned sufficiently, gently pour the ground beef and its sauce into the potatoes.
Stir gently to evenly mix the potatoes with the sauce and cover. Continue to cook for a few minutes to assure the potatoes are cooked completely, about 3 to 4 minutes.
Uncover, gently stir and check that most of the liquid has been absorbed by the potatoes. If not, continue to cook uncovered until desired consistency is attained. Test for seasoning and serve.
