Fried Rice

Fried rice is a great way to use left-overs. This dish requires day-old rice, a bit of chopped onions, soy sauce and any protein(s) you desire (or have left over). The precise amount of ingredients is not very critical. Sautéing the onions well makes this dish work. Overall, the fried rice takes about a half an hour to prepare so it’s a pretty quick dish to have handy. Once the fried rice is done, test for seasoning and serve.

INGREDIENTS
  • 2 cups cooked day-old white rice (refrigerated)
  • 1 small onion chopped (about ¼ cup)
  • 2 eggs, beaten
  • About one cup of protein roughly chopped (In the video, I used left-over roast turkey thighs and a hot dog, but almost anything will work)
  • 2 Tablespoons Cooking Wine (or water)
  • 2 Tablespoons Soy Sauce
  • Minced green onions (about 2 Tablespoons)
  • Dash of white pepper to taste
INSTRUCTIONS

1. Begin by putting a thin coat of oil on the skillet and preheating it at medium low temperature to season the pan a bit. Skip this step if you have a non-stick skillet.

2. Gather and prepare the ingredients. Take rice out of refrigerator - it will be in a clump the shape of the container. Using your hands “crush” the clump of rice into its individual grains and set aside. Chop the onions and set aside. Coarsely chop any proteins you’re going to use and set aside. In a small bowl, beat two eggs and set aside. Mince some green onions and set aside. Finally, combine 2 Tablespoons of soy sauce and 2 Tablespoons of cooking wine (or water) in a small bowl and set aside.

3. Add some oil to the skillet at medium heat, scramble the eggs and remove from the skillet.

4. Next, sauté the onions over medium heat, stirring frequently until translucent, about 3 minutes. Add proteins (if using) and cook for a few minutes until done to your liking.

5. Add the rice and stir-fry for a couple minutes until the rice is heated; move the rice around so it does not stick to the skillet. Add the soy sauce solution and return the egg to the skillet. Stir to combine the sauce with the rice and cover for a couple minutes.

6. Uncover, add the green onions and mix everything together to achieve a uniform color. Taste for seasoning, turn off the burner and serve.
