B.E.S.T. (Basic, Easy, Simple, Tomato) Sauce for Pastas

This versatile sauce is adapted from Essentials of Classic Italian Cooking by Marcella Hazan. The Hazan Tomato Sauce has been a subject of many published articles and discussed on numerous sites. This sauce, with one form of adaptation or another, should be in every kitchen arsenal because it is a basic, easy, simple tomato sauce.

INGREDIENTS
  • 1 medium onion, halved
  • 1 can (14 ½ oz) whole tomatoes, undrained
  • Butter (anywhere between 3-5 tablespoons, depending on taste)
  • Pinch of salt to taste
INSTRUCTIONS

Combine the tomatoes (including liquid), butter, and onion halves in a saucepan. Add a pinch or so of salt.

Place over medium heat and bring to a simmer. Cook, uncovered, for about 45 minutes, stirring occasionally.

Discard the onion (optional) before finishing your pasta in the sauce. This recipe makes enough sauce for a pound of pasta.
